Yes, you can "squeeze" the 285/65R18 onto the OEM 18x7 rim with no problems. The 285 series width is the widest tire to still fit onto the 7" wide rim.
However, you WILL have to crank the front torsion bars for the 285/65R18 tires to clear the front wheel-wells and turn freely. The OEM rear wheel-wells are fine without any modification as there is gobs of extra space in the rear wheel-wells. Your interfence problems will be solely limited to the front wheel-wells, so front TB cranks and front cladding trim will be mandatory when using the very stout 285/65R18 size tire.
With only some "creative" front cladding trim, you can easily install 275/70R18 (33" O.D.) onto a 100% Stock OEM VX without any lifting whatsoever if using the OEM 18x7 rims. The narrower 275 series have less of a swing arc than the slightly wider 285 series. The "swing arc" is where the VX has problems with handling oversized tires inside the tightly cramped front wheel-wells. The wider the tire, the greater increase in swing arc, and thus increased front wheel-well interference when turned.
