Although I am lifted, I am running 16x8's with a +20 backspacing on my offroad set up. I am running 31x10.5 MTR's. Puts the tires pretty much even with the edge of the cladding.

Either will work, it depends on the look / function you want. The +20 offset will be closer to stock performance and look. The tires will probably sit just inside the fenders, if not flush. The 0 offset will probably protrude 1/2" or 3/4" or so. Not sure how the change in geometry will affect offroad performance. Others can probably offer better advice regarding that.
