For me hot sauces need to have a flavor to them. There are far to many that are hot just for the sake of being hot but have little to offer taste wise.
Living in Tucson I have been fortunate that there are a lot of home brew sauces made by some of the peopli I know/worked with that were awesome...unfortunately most don't share their recipes (ancient family secrets?).![]()

Amen to that! The best stuff I've had is from a steakhouse in Mammoth when we met up with Snowtrooper for 4th of July several years ago. Man that stuff was good. My favorite is not exactly hot sauce but the asian zing sauce from Buffalo Wild Wings sweet and spicy
I like habanero sauces, and prefer scotch bonnets.
One of my favotires is Marie Sharps.
The idea is flavor, and not just pure heat. I don't like sauces made with pepper extract.
