We lived in Plano for 11 yrs and used to go out to Gilmer TX with the Texas Motorized Trails Coalition and go offroading at Barnwell Mountain. There's no rock crawling or anything, but does have a lot of dirt & trees. It's out by Longview TX.

We also went to Big Bend National Park a lot. It has tons of easy/moderate dirt roads/trails (and NO crowds in July, that's for sure).
